I live in a household of males. Even my dog and cat are male. And they are all completely and utterly guided by their stomachs. They are never full. But I’m also in a household of not just males, but male athletes (okay, the dog is getting a bit old to be considered an athlete!). They take their eating very seriously. A whole bunch of my favourite foods all in one dish. Prep time is quick and easy, it just takes awhile to cook so don’t do like I usually do and start thinking about this one way too late. I like this one too because more often than not I have these ingredients in my fridge.
This recipe is my favourite when I really don’t have time to defrost meat (or don’t have any in the house!). We usually seem to have a can of tuna, so throw in some pasta and sun-dried tomatoes and it becomes a nice meal. I usually add pine nuts, spinach, and anything else to give it a new twist each time. Cooking is not my thing. I can cook just fine following a recipe. I can even veer off the recipe and add my own touches (not always a good thing). But it’s just not something I work my day around. And I have two teenage boys who would love me to come up with new healthy ideas everyday. This salmon recipe is a favourite of my family. I try to buy salmon when it’s on sale or at Costco because the fillets are so huge. Add the salmon with some brown rice and vegetables and it’s delicious.
